PRESS ENTERPRISE – Under sunny skies and breezy conditions, the water at Pechanga Resort & Casino’s new pool complex sparkled as construction crews put final touches on the 4.5 acre space Friday, March 2.  The Cove  will now open  Monday, March 19, due to recent rains. It’s the final component of Pechanga’s $300 million expansion, which includes a new hotel tower, Pechanga Summit — a new event center, Spa Pechanga, Coveside Grill and Lobby Bar & Grill.
