Set aside.<\/li>\n<li>Combine all the dry ingredients in a medium size mixing bowl. Using a paddle attachment, mix for about 1 minute. No stand mixer? Not to worry. Combine dry ingredients and mix well by hand.<\/li>\n<li>Add in the liquid mixture to the dry mixture and continue to mix for 3 minutes, until well combined. Let the batter sit for about an hour at room temperature to allow ingredients to well incorporate and allow flavors to unfold. Cover if necessary.<\/li>\n<li>Grease a mini muffin pan with cooking spray.
